He or she Should:

Supervise waiters/waitresses when needed
Monitors food stocks and place orders timely
Check freshness of... food and discard out-of-data items
Ensure compliance with all health and safety regulations within the kitchen area
Set up the kitchen with cooking utensils and equipment, like knives, pans and kitchens scales
Study each recipe and gather all necessary ingredients
